Product description: yeast doughnut mix, CREDIN, 15 kg. Concentrated 20% mix for yeast doughs and doughnuts. The product is certified with the RSPO MB certificate.
Preparation method: 2000g wheat flour, 700g water, 500g eggs, 400g BERLINER CONCENTRATE 20%, 200g margarine, 160g fresh yeast. Mix all ingredients together. Mixing time: 4 min. slow, 6 min. fast. Dough temperature: ~26ºC. Dough quantity: 1650 g/30 pcs. Intermediate fermentation 20 min. Final fermentation ~50 min. Frying temperature in fat: ~180˚C. Cooking time: 3 min (top) +2 min (bottom) +1 min (top). Organoleptic properties: Color: light creamy. Odor, taste: characteristic of the raw materials. Appearance: loose powder without foreign impurities. Chemical/physical characteristics: Moisture <15%.
