Product Description: Boneless, Skinless, Bacon Free, Chained, Frozen Pork Loin. Sirloin - the back and lumbar parts of the longus muscle, cut from the fifth dorsal vertebra to the last lumbar vertebra. The loin consists of the longest back muscle, the pectoralis muscle and the psoas medius muscle. Back bacon with skin is cut from the separated loin with bone. When cutting, do not cut the tenderloin. After cutting the bacon with the skin, the long back muscle is cut from the back part with the bone, together with the chain. It should be cut in such a way that the tenderloin is smooth, without bumps, and as little meat as possible remains on the spine. In an effort to damage the muscles as little as possible, the first cervical vertebra and the adjacent cartilage are removed. Next, the tail meat is separated, the remaining layer of bacon is removed up to the back membrane, and the chains are also removed. The product can be cut with a cutter. The product must be free of large veins, membranes, loose connective tissue, hemorrhages, bruises, visible blood residues, superficial lymph nodes, bone chips and splinters and without contamination. The color of the meat is light or dark pink. Possible release of natural meat juices in the package. Heat treatment is required before use. After thawing the product, do not refreeze.
