400 g peeled and shaved sea bass; 15 g cane sugar; 100 g red cabbage sauce; 12 sweet and sour red pepper flakes; 50 g extra virgin olive oil; 25 g Himalayan salt puree

Preparation method:
Place the sea bass in a vacuum bag with the cabbage sauce, salt, sugar and five chopped Sichuan peppers. Seal and marinate for twelve hours. Prepare the vinaigrette by mixing the umami, citrus dressing and extra virgin olive oil. Arrange the sliced sea bass on a plate, brush lightly with oil and toss with the vinaigrette, seasoned sakura mix and pepper drops. Garnish with Sichuan peppercorns.
